Beef, Black Bean, and Tomato Potato Skillet

Ingredients
- 500 g 500 g lean ground beef (crumbled)
- 1 can 1 can black beans (drained and rinsed)
- 1 can 1 can diced tomatoes (undrained)
- 700 g 700 g potatoes (diced)
- 1 medium 1 medium onion (chopped)

Start potatoes: Microwave or pan-cook the diced potatoes until just tender, then set aside. 2. Brown beef: Cook the beef and onion in a large skillet until no longer pink. 3. Simmer: Add tomatoes and black beans and simmer until thick and hot. 4. Combine: Fold in potatoes and cook for 2 minutes more.
