Chicken Souvlaki Rice Bowls

Ingredients
- 700 g 700 g chicken thighs (cubed)
- 1.5 cups 1.5 cups basmati rice (dry)
- 2 cloves 2 cloves garlic (minced)
- 2 cups 2 cups mini cucumbers (sliced)
- 3 cups 3 cups baby spinach or spring mix (washed)
- 1 cup 1 cup plain yogurt (stirred into sauce)

Marinate: Toss chicken with garlic and half the yogurt; let it sit while the rice cooks. 2. Cook rice: Cook the basmati rice according to package directions. 3. Cook chicken: Pan-sear the chicken in a hot skillet until browned and cooked through. 4. Assemble: Serve over rice with cucumbers and spinach, then spoon the remaining yogurt over top.
